A weekend of foraging for mushrooms and other wonderful edibles in the Welsh countryside, we will be looking for anything and everything as we aim to look at the world of preserving what we find through a variety of methods, from infusing the flavours in vinegar or alcohol, to making cordials, jams and even just drying them and storing.
This aspect of foraging is often overlooked as whilst it is fantastic to your find there and then, it is also great to be able to store them for as long as possible so you can enjoy them all year round. Drying herbs and mushrooms can give them a 2 year shelf life, the same with apple juice and cordials if preserved properly and we will be looking at the different ways you can do this in your home.
The accomodation is comfatable and close to where we will be foraging, single and double rooms are available and your meals will be provided (evening meal Saturday through to lunch Sunday) as will the tools you will need to preserve some of our finds. In the evening sit back and enjoy samples of different foraged treats.
We will be looking for species like the Chanterelle, Porcini, Wood Hedgehog as well as berries such as Rowan, Sloes and Hawthorn, amongst many other species we will hopefully find.
Our courses are limited to 6 people as this number allows for a good atmosphere and allows Lauren and David to get to know what each persons knowledge base is and cater to their needs, whether you are a complete novice to foraging or slightly more experienced we can offer everyone a truly great experience. What to bring - A good pair of walking boots is advisable, a packed lunch and drinks. Clothing to suit the weather of the day. Many people find it helpful to bring a notebook or camera to make notes of all the plants we see.

The Days Targets
• An amazing two day foraging looking for mushrooms and other tasty wild edibles, we aim to pick a variety of species to take back to our accomodation to look at different ways of preserving them.
• Have a go at making different wild foraged flavoured vinegars, liqueurs, jams as well as learning how to dry some of the herbs and mushrooms we find.
• Learn how to forage sustainably, identify key edible and poisonous species in the area.
