60ml Botanist Gin 

30ml Lime Juice

25ml Spruce Tip Cordial

Soda Water (to top up the glass)

1 Sprig of Rosemary


GLASS: High Ball or Collins.


ICE: Cube, fill the glass.


GARNISH: Rosemary sprig.


METHOD: Fill a glass with cubed ice. Mix the Gin, Spruce Tip Cordial and Lime Juice in a cocktail shaker with ice until well mixed and cold. Strain into the glass. Top up with soda water and garnish with a rosemary sprig.


FORAGING ADVICE: Only ever pick a plant from the wild that YOU know 100% what it is. There is a poisonous evergreen tree called Yew (Taxus baccata), so be sure you know you have not picked that.

A walk in the Welsh countryside looking for Nightjar (a weird bird that is almost half hawk, half owl) took me through many, many acres of conifer plantations, mainly Sitka Spruce (Picea sitchensis). Using the young shoots to make a cordial (infusing the tips for 48 hours in simple syrup with some lemon juice) I decided to make a cocktail to remind me of the smells of the is delicious. Using rosemary as a garnish helps to bring out that resin like smell from the spruce. It is a twist on a classic collins and here we use Botanist Gin.
